Ingredients for Single Meal

  • 1 - lb(s) salmon fillet
  • - Salt and pepper
  • 8 - oz. pesto
  • 1 - cup(s) shredded mozzarella cheese
  • Side: - salad**
  • Side: - rice**
  • - Foil
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Cook rice, as directed.
  2. Preheat grill.
  3. Cut salmon fillet into 4 pieces.
  4. Place each salmon filet on a piece of foil that’s large enough to wrap around the salmon.
  5. Season each salmon filet with salt and pepper. Spread the pesto directly onto the salmon, and then sprinkle the shredded mozzarella cheese on top.
  6. Grill around 400 F for 15 to 20 minutes,, or until salmon is no longer pink in the middle.
  7. Prepare the salad.
  8. Serve Pesto Salmon with side salad and rice.

Freezeasy Meal Prep Directions

  1. Cut 2 lbs. of salmon fillet into 8 pieces.
  2. Set up 8 large pieces of foil.

To each piece of foil, add the following ingredients:

  • 1 salmon filet
  • Salt and pepper
  • Pesto, spread directly onto salmon
  • Pinchful of shredded mozzarella cheese onto each piece of salmon

Wrap foil tightly around the chicken and veggies. Add half of foil packs into each gallon-size plastic freezer baggie. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw completely in the fridge before grilling as directed.

Recipe is dairy-free when made with dairy-free pesto and you omit the cheese.

Gluten-Free Modifications

Recipe is gluten free when served with gluten-free sides.
