Deep, delicious flavor in this Ancho chile-tomato based sauce. It’s perfect for chicken, but would also be great with beef roast. Enjoy!

Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • 1 - 28 oz. can(s) crushed tomatoes
  • 1 - Tbsp minced onion
  • 1 - tsp minced garlic
  • 2 - tsp chili powder
  • 2 - tsp ancho chili powder
  • - Salt and pepper
  • Garnish: - avocado slices**
  • Side: - rice**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Open the can of crushed tomatoes.
  2. In a small mixing bowl, whisk together the crushed tomatoes, minced onion, minced garlic, chili powder, ancho chili powder, and a pinch of salt and pepper.
  3. Place the chicken breasts in the base of the slow cooker and pour the tomato mixture on and around the chicken. If your slow cooker tends to run hot or overcook food, add 1/2 cup of water or chicken broth.
  4. Set on low and cook for 8 hours. Once cooked, shred the chicken into the sauce before serving.
  5. Cook the rice as directed.
  6. Prepare veggies.
  7. Serve Slow Cooker Ancho Chile Chicken, shredded, over rice with side of veggies.

  1. Open 2 cans of crushed tomatoes.
  2. In a small mixing bowl, whisk together the crushed tomatoes with 2 Tbsp minced onion, 2 tsp minced garlic, 4 tsp chili powder, 4 tsp ancho chili powder, and a pinch of salt and pepper.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 boneless chicken breasts
  • Half of the prepared sauce

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.
