  • 12 - small boneless chicken thighs
  • 1 - 16 oz sliced carrot coins
  • 1 - 15 oz. can(s) crushed tomatoes
  • 1/2 - cup(s) orange juice
  • 1/2 - cup(s) orange marmalade
  • 1 - tsp minced garlic
  • 1 - tsp Italian seasoning
  • Garnish: - fresh parsley**
  • Side: - rice**
  • Side: - veggies**

Cooking Directions for Single Meal

  1. Open the can of crushed tomatoes.
  2. In a large mixing bowl, whisk together the crushed tomatoes, orange juice, orange marmalade, minced garlic, and Italian seasoning blend.
  3. Add the chicken thighs and sliced carrots with a pinch of salt and pepper to the base of the slow cooker and pour the orange-tomato sauce over the top.
  4. Set on low and cook for 8 hours.
  5. Cook the rice as directed.
  6. Prepare veggies.
  7. Serve Tangy Orange Chicken Thighs with a side of rice and veggies.

Freezeasy Meal Prep Directions

  1. In a large mixing bowl, whisk together the 2 cans of crushed tomatoes, 1 cup orange juice, 1 cup orange marmalade, 2 tsp minced garlic, and 2 tsp Italian seasoning blend.
  2. Open 2 cans of crushed tomatoes.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 12 boneless skinless chicken thighs
  • Bag of sliced carrot coins
  • Half of the prepared sauce

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.
