  • 2 - large boneless chicken breasts
  • 1/2 - small white onion(s)
  • 4 - cup(s) chicken or vegetable stock
  • 2 - cup(s) frozen corn
  • 15 - oz. can(s) tomato sauce
  • 15 - oz. can(s) black beans
  • 2 - tsp ground cumin
  • 1 - tsp garlic powder
  • To taste - Salt and pepper
  • 2 - cup(s) corn tortilla chips**
  • 1 - cup(s) shredded cheese**
  • Side: - veggies**

Cooking Directions for Single Meal

  1. To the slow cooker, add the chicken, chopped onion, chicken stock, frozen corn, tomato sauce, black beans, ground cumin, garlic powder and salt and pepper. Set slow cooker on low and cook for 8 hours.
  2. Before serving, use 2 forks to pull the chicken apart in the soup. Then ladle soup into bowls and add the crushed tortilla chips into each bowl and let them soak up some of the liquid. Top with shredded cheese, if preferred.
  3. Optional: If you wish to thicken the soup, add 1/2 to 1 tsp cornstarch or 2 Tbsp masa harina.
  4. Serve Slow Cooker Chicken Tortilla Soup with veggies.

Freezeasy Meal Prep Directions

  1. Open, drain and rinse 2 cans of black beans.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 1/2 small white onion, chopped
  • 15 oz. can black beans, drained and rinsed
  • Salt and pepper
  • All servings - Assembly lines - (Note: if not adding chicken stock to the baggie before you freeze it, be sure to add note to the label to add it at the time of cooking.)

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.

Special notes

This soup can also be cooked in a large saucepan or Dutch oven. Place all thawed ingredients to Dutch Oven and cook over medium heat with lid on for 30 minutes, or until chicken is cooked. Shred chicken with fork before serving as directed.
