A ketogenic eaters dream! Meatloaf wrapped in bacon - yes, please! I prefer to make this with a leaner ground beef, as there will be plenty of fat from the bacon in this meatloaf, but you could use a fattier beef too. Enjoy!

- 2 - lb(s) lean ground beef
- 1 - Tbsp minced onion
- 1 - tsp garlic powder
- 1/2 - cup(s) almond flour
- 1 - egg(s)
- 12 - slices bacon
- Side: - salad**

Cooking Directions for Single Meal
- Preheat the oven to 350 F.
- In a large mixing bowl, combine the ground beef, minced onion, garlic powder, almond flour, egg and mix well.
- Line the meatloaf pan with bacon, so the ends touch in the middle of the base of the pan and the bacon lays to the outside of the pan. You want the bacon to wrap around to the top of the meatloaf. Press the meatloaf mixture into the pan, then wrap the bacon pieces around the meatloaf.
- Bake in the preheated oven for 55 to 60 minutes, or until beef is cooked in the middle and the bacon is crispy on top. If you need to crisp up the bacon, run it under the broiler for 1-2 minutes.
- Prepare the salad.
- Serve Bacon Meatloaf with salad.

- In a large mixing bowl, combine 4 lbs. ground beef, 2 Tbsp minced onion, 1 tsp garlic powder, 1 cup almond flour, 2 eggs and mix well.
To each disposable loaf tray, add the following ingredients:
- 12 slices of bacon, set up to wrap around the beef
- Half of the prepared meatloaf
Cover with foil or lid, add label and freeze.
Freeze & Thaw Instructions
Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the oven and baking as directed.
