Totally crushing on this simple to prep ketogenic chicken! We’re stuffing the chicken with a dill-onion-cream cheese combo and then wrapped it in bacon! These can be frozen all together in a tray, or if you wanted to flash freeze them and put them into a baggie, you can pull one at a time out to thaw and cook! Enjoy!

Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • - Salt and pepper
  • 4 - oz. cream cheese
  • 1 - tsp dried dill
  • 1 - tsp minced onion
  • 12 - slices bacon
  • Side: - salad
  • 1 - 9x13 disposable foil tray(s)

Cooking Directions for Single Meal

  1. Preheat the oven to 400 F.
  2. Set out the cream cheese to soften.
  3. Slit each of the chicken breasts lengthwise at their widest section, creating a pocket.
  4. In a small mixing bowl, combine the softened cream cheese with the dill and minced onion.
  5. Spoon the cream cheese mixture into each of the chicken breast pockets. Wrap 3 pieces of bacon around each of the stuffed chicken breasts. Place into a baking dish and sprinkle the chicken with salt and pepper.
  6. Bake in the preheated oven for 45 to 50 minutes, or until chicken is cooked through. Cooking time may vary depending on thickness of each chicken. If you want to “crisp up” the bacon, run the pan under the broiler for 1-2 minutes, or until crisped to your liking.
  7. Prepare the salad.
  8. Serve Bacon Wrapped Chicken with salad.

Freezeasy Meal Prep Directions

  1. In a small mixing bowl, combine 8 oz. softened cream cheese with the 2 tsp dill and 2 tsp minced onion. Spoon the cream cheese mixture into each of the chicken breast pockets.

To each disposable tray, add the following ingredients:

  • 4 bacon wrapped chicken breasts
  • Salt and pepper, sprinkled on top

Cover with foil or lid, add label and freeze.

Freeze & Thaw Instructions

Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the oven and baking as directed.

Dairy-Free Modifications

If you can tolerate goat cheese, use goat cheese in place of the cream cheese.
