Ingredients for Single Meal
- 2 - lb(s) medium shrimp with tails
- - Salt and pepper
- 1/2 - cup(s) butter
- 2 - Tbsp lemon juice
- 2 - Tbsp white cooking wine
- 1 - cup(s) breadcrumbs
- 2 - Tbsp grated Parmesan cheese
- 1 - tsp minced garlic
- 1 - tsp minced onion
- Garnish: - lemon wedges**

Cooking Directions for Single Meal
- Cook rice, as directed. Melt the butter.
- Preheat oven to 400 F.
- Spread the shrimp into the base of the disposable foil tray.
- In a mixing bowl, whisk together the melted butter, lemon juice and white cooking wine. Pour sauce over the shrimp.
- In another mixing bowl, toss together the bread crumbs, Parmesan cheese, minced garlic, and minced onion. Sprinkle over the top of the shrimp and butter sauce.
- Bake in the preheated oven for 12 to 15 minutes, or until shrimp are cooked through.
- Prepare the salad.
- Serve Baked Shrimp Scampi with a squeeze of fresh lemon, side salad and rice.

- In a mixing bowl, whisk together 1 cup melted butter, 4 Tbsp lemon juice and 4 Tbsp white cooking wine. Pour sauce over the shrimp.
- In another mixing bowl, toss together 2 cups bread crumbs, 4 Tbsp Parmesan cheese, 2 tsp minced garlic, and 2 tsp minced onion.
To each disposable tray, add the following ingredients:
- 2 lbs. medium shrimp with tails
- Salt and pepper
- Half of the melted butter sauce
- Half of the bread crumbs topping
Cover with foil or lid, add label and freeze.
Freeze & Thaw Instructions
Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before baking as directed.
Special notes
Serve with cauliflower ‘rice’ for Paleo/Whole30 meal.
