Ingredients for Single Meal

  • 2 - lb(s) medium shrimp with tails
  • - Salt and pepper
  • 1/2 - cup(s) butter
  • 2 - Tbsp lemon juice
  • 2 - Tbsp white cooking wine
  • 1 - cup(s) breadcrumbs
  • 2 - Tbsp grated Parmesan cheese
  • 1 - tsp minced garlic
  • 1 - tsp minced onion
  • Garnish: - lemon wedges**
  • Side: - salad**
  • Side: - rice**

Cooking Directions for Single Meal

  1. Cook rice, as directed. Melt the butter.
  2. Preheat oven to 400 F.
  3. Spread the shrimp into the base of the disposable foil tray.
  4. In a mixing bowl, whisk together the melted butter, lemon juice and white cooking wine. Pour sauce over the shrimp.
  5. In another mixing bowl, toss together the bread crumbs, Parmesan cheese, minced garlic, and minced onion. Sprinkle over the top of the shrimp and butter sauce.
  6. Bake in the preheated oven for 12 to 15 minutes, or until shrimp are cooked through.
  7. Prepare the salad.
  8. Serve Baked Shrimp Scampi with a squeeze of fresh lemon, side salad and rice.

Freezeasy Meal Prep Directions

  1. In a mixing bowl, whisk together 1 cup melted butter, 4 Tbsp lemon juice and 4 Tbsp white cooking wine. Pour sauce over the shrimp.
  2. In another mixing bowl, toss together 2 cups bread crumbs, 4 Tbsp Parmesan cheese, 2 tsp minced garlic, and 2 tsp minced onion.

To each disposable tray, add the following ingredients:

  • 2 lbs. medium shrimp with tails
  • Salt and pepper
  • Half of the melted butter sauce
  • Half of the bread crumbs topping

Cover with foil or lid, add label and freeze.

Freeze & Thaw Instructions

Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before baking as directed.

Serve with cauliflower ‘rice’ for Paleo/Whole30 meal.
