Check out how easy these foil packs are to prep to make tonight, or to prep-ahead for the freezer.

Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • - Salt and pepper
  • 4 - Tbsp soy sauce
  • 4 - tsp sesame oil
  • 1 - tsp ground ginger
  • - Salt and pepper
  • 1 - red bell pepper(s)
  • 16 oz. - bag(s) baby carrots
  • Side: - rice**
  • Side: - frozen eggrolls**
  • - Foil
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Preheat oven to 400 F.
  2. Place each chicken breast on a piece of foil that’s large enough to wrap around the chicken. Season each with a pinch of salt and pepper.
  3. Seed and slice the red bell pepper into strips.
  4. In a small mixing bowl, whisk together the soy sauce, sesame oil and ground ginger. Pour evenly, over each chicken piece. Evenly divide the sliced bell peppers and add a few pieces of baby carrots to each foil pack. Wrap the foil up into packs.
  5. Grill at 400 F for 40 to 50 minutes, or until chicken is cooked through. Cooking time may vary, depending on thickness of the chicken and heat of the grill.
  6. Cook the rice, as directed.
  7. Warm the eggrolls, as directed.
  8. Serve Baked Teriyaki Chicken Foil Packs with side of eggrolls and rice.

Freezeasy Meal Prep Directions

  1. Seed and slice 2 red bell peppers.
  2. Set up 8 large pieces of foil.

To each piece of foil, add the following ingredients:

  • 1 chicken breast
  • Pinch of salt and pepper
  • 1 Tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp ground ginger
  • Sliced red bell peppers, evenly divided among all foil packs
  • A few baby carrot pieces, evenly divided among the packs

Wrap foil tightly around the chicken and veggies. Place half of the packs into each of the gallon-size plastic freezer baggies. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw completely in the fridge before baking as directed.

Recipe is dairy-free when served with dairy-free sides.

Gluten-Free Modifications

Recipe is gluten-free when you use gluten-free soy sauce. If needed, use alternative side dish for the frozen eggrolls.
