BBQ beef filling, baked into biscuit dough. We’re freezing the BBQ beef filling for this meal and then on “cook day,” you’ll add the beef to the biscuit dough in muffin tins and make perfect BBQ Beef Cups for dinner. Enjoy!

- 1 - green bell pepper(s)
- 1 - Tbsp minced onion
- 1 - tsp garlic powder
- 1 - cup(s) BBQ sauce
- 8 - refrigerated biscuits
- 1 - cup(s) shredded cheddar cheese

Cooking Directions for Single Meal
- Preheat oven to 375 F and lightly grease 8 muffin tin wells with non-stick cooking spray.
- Seed and chop the green bell pepper.
- In a large skillet, brown the ground beef with the green bell pepper, minced onion and garlic powder. Drain and return to the skillet. Stir in the BBQ sauce and heat for 1 to 2 minutes with the beef in the skillet.
- Place the refrigerated biscuits onto a clean, floured surface and roll flat. Place them into the prepared muffin tin and then add large scoop of BBQ meat and top with pinch of shredded cheese.
- Bake in the preheated oven for 13 to 15 minutes, or until cheese is melted and biscuit is browned on the edges.
- Prepare veggies.
- Serve BBQ Beef Cups with veggies.

- Seed and chop 2 green bell peppers.
- Brown 2 lbs. ground beef with chopped bell peppers, 2 Tbsp minced onion and 2 tsp garlic powder. Drain and set aside to cool.
To each gallon-size plastic freezer baggie, add the following ingredients:
- Half of the browned ground beef and green peppers
- 1 cup BBQ sauce
- Do not freeze the biscuit dough or shredded cheese with this filling.
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the skillet to reheat and then cook the BBQ cups as directed.
