This is such a fantastic and flavorful make-ahead burrito to have in your freezer. Perfect for quick weeknight dinners, and even lunches at home. Enjoy!

Ingredients for Single Meal

  • 1 - lb(s) ground beef
  • 2 - Tbsp minced onion
  • 1 - tsp garlic powder
  • 1 - medium red bell pepper(s)
  • 1 - 4 oz. can(s) green chiles
  • 1 - 15 oz. can(s) refried beans
  • 1 - Tbsp taco seasoning
  • - Salt and pepper
  • 12 - burrito size tortillas**
  • 2 - cup(s) shredded Monterrey Jack cheese**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Preheat oven to 350 and lightly spray a baking sheet with non-stick cooking spray.
  2. Seed and finely chop the red bell pepper.
  3. Open the cans of green chilies and the refried beans.
  4. In a large skillet, brown the ground beef with the minced onion and garlic powder. Drain and return to the skillet. Stir in the green chilies, chopped red bell peppers, and taco seasoning. Season with salt and pepper to taste.
  5. Spoon and spread the refried beans in a thin strip along the middle of each tortilla, then top with some of the ground beef mixture. Add pinchful of the shredded cheese and roll up and fold in the edges.
  6. Place on the baking sheet, seam side down, and bake for 15 to 20 minutes, to allow cheese to melt.
  7. Prepare veggies.
  8. Serve Beef & Bean Burritos with veggies.

Freezeasy Meal Prep Directions

  1. Seed and finely chop 2 red bell peppers.
  2. Open 2 cans of green chiles.
  3. Brown 2 lbs. ground beef with 2 Tbsp minced onion and 2 tsp garlic powder. Drain and set aside to cool.
  4. Open 2 cans of refried beans.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the assembled burritos into each baggie

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, and then bake in the oven until warmed through and slightly browned.

Dairy-Free Modifications

Omit shredded cheese for dairy-free burritos.

Gluten-Free Modifications

Unfortunately there is not a great option for gluten-free burritos.
