You could cook the cauliflower rice on the side and serve the curry over the top. Or you could stir in a little of the cauliflower rice right into the sauce. If you need to add a little more liquid with the cauliflower rice, you could stir in a half cup or so of beef stock. Enjoy!

Ingredients for Single Meal

  • 2 - 15 oz. can(s) coconut milk
  • 3 - Tbsp red curry paste
  • 1 - Tbsp curry powder
  • 1 - tsp ground ginger
  • 1 - tsp garlic powder
  • 1 - red bell pepper(s)
  • 1/2 - lb(s) shredded carrots
  • 1 - lb(s) beef for stirfry
  • Garnish: - cilantro and green onion**
  • Side: - cauliflower rice**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Cook the cauliflower rice, as directed.
  2. In a large saucepan or skillet, whisk the coconut milk, curry paste, curry powder, ginger and garlic powder. If your coconut milk has separated in the can, it will become smooth again when it heats up.
  3. Stir in the bell pepper slices, shredded carrots and beef strips. Let cook for about 15 minutes, allowing the beef to cook through, the veggies to soften and the flavors to mingle.
  4. Serve Beef Red Curry over cauliflower rice with optional cilantro and green onion garnish.

Freezeasy Meal Prep Directions

  1. Slice 2 red bell peppers.
  2. Whisk together 4 – 15 oz. cans coconut milk, 6 Tbsp red curry paste, 2 Tbsp curry powder, 2 tsp ground ginger, and 2 tsp garlic powder.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the sliced bell peppers
  • 1/2 lb. shredded carrots
  • 1 lb. beef for stirfry
  • Half of the prepared sauce into each bag

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes before cooking in skillet or saucepan.

Special notes

If you wish to make a thicker curry, you could use a 15 oz. can of coconut milk and a 15 oz. can of coconut cream. This is NOT the same coconut cream that is on the alcohol aisle, as that contains sugar and is used to make pina coladas. This is a canned coconut cream that would be near or next to the canned coconut milk, if your store carries it.
