Beef Taquitos

With these Beef Taquitos, we are making the filling to put into the freezer, then we can assemble and bake them. You could make the full taquitos and freeze them made, then bake them. But I prefer to use fresh tortillas for making taquitos.
Ingredients for Single Meal
- 1 - lb(s) ground beef
- 1 - Tbsp minced onion
- 1 - tsp garlic powder
- 1 - 8 oz can(s) tomato sauce
- 1 - packet(s) taco seasoning
- 24 - corn tortillas
- 1 - cup(s) shredded Pepperjack cheese
- Garnish: - canola oil**
- Side: - avocado slices**
- Side: - salad**
- 1 - 9x13 disposable foil tray(s)

Cooking Directions for Single Meal
- Preheat the oven to 400 F.
- In a large skillet, brown the ground beef with the minced onion and garlic powder. Once browned, drain and then mix in the tomato sauce and taco seasoning. Stir in the shredded Pepperjack cheese
- If needed, warm the corn tortillas so they will roll easily.
- Spoon the meat sauce evenly into the corn tortillas and wrap tightly. Place into baking dish or baking sheet, brush with canola oil and then bake in the preheated oven for 10 to 15 minutes, or until tops begin to golden. If you wish to turn them once halfway through, you can.
- Prepare the salad.
- Serve Beef Taquitos with side salad and avocado.

- Open 2 cans of tomato sauce.
- Brown 2 lbs. ground beef with 2 Tbsp minced onion and 2 tsp garlic powder. Drain and stir in 2 cans of tomato sauce and 2 packets of taco seasoning. Mix in 2 cups of shredded Pepperjack cheese.
To each disposable tray, add the following ingredients:
- Single or double layer of taquitos**
Cover with foil or lid, add label and freeze.
Freeze & Thaw Instructions
Put tray in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the oven and baking as directed. **Just before baking, brush with canola oil.
