Ingredients for Single Meal
- 4 - 15 oz. can(s) black beans
- 1 - 15 oz diced tom & green chile
- 1 - small white onion(s)
- 2 - garlic cloves
- 1 - tsp ground cumin
- 1 - Tbsp lemon juice
- 2 - cup(s) chicken or vegetable stock
- 1 - Tbsp cornstarch**
- - Salt and pepper
- Side: - dinner rolls**
- Side: - veggies**
- 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal
- To large sauce pan, add the undrained cans of black beans, can diced tomatoes and green chilies, chopped white onion, garlic, cumin, lemon juice and chicken or vegetable stock and stir well. Bring to bubbling and then simmer for 15 minutes.
- In a small bowl, stir the cornstarch with 2 Tbsp water. Once bubbling, stir in the cornstarchwater mixture and let the soup thicken while it simmers. Add a little more cornstarch if you want it to be thicker. Season with salt and pepper to taste.
- Warm dinner rolls.
- Prepare veggies.
- Serve Black Bean Soup with rolls and veggies.

- Finely chop 2 small onions. Crush 4 cloves garlic.
- Open 8 cans of black beans.
- Open 2 cans of diced tomatoes with green chiles.
To each gallon-size plastic freezer baggie, add the following ingredients:
- Half of the canned black beans, undrained
- Half of the diced tomatoes with green chilies, undrained
- Half of the chopped onion
- Half of the crushed garlic
- 1 tsp ground cumin
- 1 Tbsp lemon juice
- 2 cups chicken or vegetable stock
- Salt and pepper to taste
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or in a warm bowl of water for about 20 minutes, before transferring to the saucepan for reheating.
Special notes
Do NOT add cornstarch to bag before freezing. Use vegetable stock for vegetarian meal.
