Burrito Pie {Filling}
Yield: 4 servings
Active Time: 15 minutes
Prep Time: 15 minutes
Cook Time: 25 minutes
Absolutely, positively adore this meal. It’s a plates licked clean and baking dish polished out kind of meal at our house. You “could” freeze this after you have assembled it, but we recommend just freezing the filling and then assembling it the day you cook it. (Assembling it on cook day will help keep the tortillas from getting soggy - blah!)

Dairy-Free Modifications
Unfortunately, there is not a great gluten-free option for this meal.
Gluten-Free Modifications
Use a few corn tortillas in place of the larger flour tortilla for a gluten-free meal.
