- 1 - Tbsp olive oil**
- 1 - small white onion(s)
- 2 - 15 oz. can(s) coconut milk
- 1 - Tbsp minced garlic
- 4 - Tbsp red curry paste
- 3 - 10 oz. butternut squash cubes
- 1 - 10 oz. frozen chopped spinach
- 4 - whole basil leaves
- 2 - cup(s) vegetable broth
- - Salt and pepper
- Side: - rice**

Cooking Directions for Single Meal
- Cook rice, as directed.
- Open the cans of coconut milk.
- Chop the small white onion.
- In a large saucepan, heat the olive oil and saute the chopped onion for 5 minutes, or until it begins to turn translucent.
- Stir in the coconut milk and whisk until smooth. Whisk in the minced garlic and red curry paste. Stir in the frozen butternut squash, frozen spinach, and basil leaves. Pour in the vegetable broth and stir to combine.
- Bring to bubbling over medium high heat, then reduce heat to low and let simmer for 15 to 20 minutes. Season with salt and pepper to taste.
- Serve Butternut Squash Curry over rice.

To each gallon-size plastic freezer baggie, add the following ingredients:
- 3 - 10 oz. bags frozen butternut squash cubes
- 1 - 10 oz. bag frozen chopped spinach
- 4 whole basil leaves
- 1 Tbsp minced garlic
- 4 Tbsp red curry paste
- 2 cups vegetable broth
- Do not add the canned coconut milk to the freezer bag.
- Remove as much air as possible and seal. Add a label to the baggie and freeze.
Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze for up to 6 months in the fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring all of the contents of the baggie into a large saucepan or Dutch oven. Bring to bubbling, stir in the canned coconut milk and simmer for 20 minutes.
