Cajun Chicken Sloppy Joes

You will love the bold, flavorful twist on the classic sloppy joes, featuring spicy Cajun-seasoned ground chicken, bell peppers, onions and carrots, served with melty cheddar cheese on a warm bun.

Ingredients for Single Meal

  • 1 - small white onion(s)
  • 2 - celery stalk(s)
  • 2 - whole carrots
  • 2 - Tbsp butter
  • 1 - lb(s) ground chicken
  • 1 - 15 oz. can(s) sloppy joe sauce
  • 1 - Tbsp Cajun seasoning
  • 1/2 - tsp paprika
  • - Salt and pepper
  • 4 - hamburger buns**
  • Garnish: - shredded cheddar cheese**
  • Side: - salad**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Finely chop the white onion. Chop the celery stalks. Peel and chop the carrots.
  2. In a large skillet, melt the butter and saute the onion, celery, and carrots for 3 to 5 minutes. Mix in the ground chicken with the veggies and brown until the chicken is no longer pink.
  3. Stir in the sloppy joe sauce, Cajun seasoning and paprika. Reduce heat to low and simmer for 10 minutes. Season with salt and pepper to taste.
  4. Assemble the sandwiches by adding sloppy joe meat onto buns and add a pinch full of shredded cheddar on top of the sloppy joe meat. Let melt and add the top bun.
  5. Prepare side salad.
  6. Serve Cajun Chicken Sloppy Joes with side salad.

Freezeasy Meal Prep Directions

  1. In a large skillet, melt 4 Tbsp butter and saute all of the chopped veggies for 3 to 5 minutes, then add 2 lbs. Ground chicken and cook until no longer pink. Set aside to cool before adding to the baggie.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the browned chicken and veggies mix
  • 1 - 15 oz. can sloppy joe sauce
  • 1 Tbsp Cajun seasoning
  • 1/2 tsp paprika

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze for up to 6 months in the fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the skillet and reheating the sloppy joe sauce. Assemble sandwiches as directed.
