Yup, we’re freezing 2 baggies together on this one. You can “nest” them together, or you can label and tape them together. We recommend this because we need to cook the chicken and the sauce first, and then the veggies (and egg) and then we toss it all together with some cooked egg noodles. The end result - a perfect bowl of Chicken Pad Thai. Enjoy!

Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • 1 - Tbsp canola oil
  • 1/4 - cup(s) brown sugar
  • 1/4 - cup(s) soy sauce
  • 2 - Tbsp rice vinegar
  • 1 - Tbsp lime juice
  • 1 - Tbsp fish sauce
  • 1 - red bell pepper(s)
  • 1 - cup(s) matchstick carrots
  • 10 - oz. rice noodles**
  • 2 - egg(s)**
  • - Salt and pepper
  • Garnish: - chopped peanuts**
  • Garnish: - lime juice**
  • Side: - salad**
  • 1 - gallon-size freezer baggie(s)
  • 1 - quart-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Cook the rice noodles, as directed.
  2. Cut the chicken breasts into bite-size pieces.
  3. Seed and slice the red bell pepper.
  4. In a large skillet, add the canola oil and saute the chicken pieces for 5 to 7 minutes, or until cooked through. Remove from the skillet and set aside on a plate.
  5. To the same skillet, stir the sliced red bell peppers and matchstick carrots together and saute for 3 to 4 minutes. Push the veggies to the side and crack in the eggs and scramble them with the veggies.
  6. Add the chicken and sauce, and cooked rice noodles in with the veggies and eggs. Toss well.
  7. Prepare the salad.
  8. Serve Chicken Pad Thai with salad.

Freezeasy Meal Prep Directions

  1. Cut 8 chicken breasts into bite-size pieces.
  2. Seed and slice 2 red bell peppers.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the chicken breast pieces
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 Tbsp rice vinegar
  • 1 Tbsp lime juice
  • 1 Tbsp fish sauce
  • To the Quart Size Baggie: add half of the sliced red bell peppers and the matchstick carrots. Label and attach to other baggie.
  • Do not add the rice noodles to the freezer baggies.

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes. Transfer the contents of the chicken baggie to large skillet with canola oil and cook through. Remove and set aside, and then saute the veggies and eggs as directed.

Unfortunately, there is not a great dairy-free option for this meal.

Keep this meal gluten-free by using a gluten-free soy and fish sauce.
