Cooking Directions for Single Meal
- Dice the onion. Slice the zucchini. Peel and slice the whole carrots.
- In a large saucepan or Dutch oven, add the chicken breasts, diced onion, zucchini slices, carrot slices, chicken stock, crushed tomatoes, minced garlic, chili powder, salt and pepper. Bring to a bubbling, then reduce heat and let simmer about 30 minutes or until chicken is cooked through. Use 2 forks to shred the chicken into bite size pieces.
- Warm the dinner rolls.
- Serve Chicken & Veggie Chili with dinner rolls.

- Open 2 cans of crushed tomatoes.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 3 large boneless, skinless chicken breasts
- Half of the chopped white onions
- Half of the zucchini slices
- Half of the carrot slices
- 4 cups chicken stock
- Half of the canned crushed tomatoes
- 2 tsp minced garlic
- 1 Tbsp chili powder
- Salt and pepper
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to saucepan or Dutch oven to cook the chicken. Once the chicken is cooked, shred it with 2 forks before serving.
Special notes
If you would prefer to not add chicken stock to your baggie, make a note on your label or bag to add at the time of cooking.
