Ingredients for Single Meal

  • 3 - large boneless chicken breasts
  • 1 - small white onion(s)
  • 1 - medium zucchini
  • 4 - whole carrots
  • 4 - cup(s) chicken stock
  • 1 - 15 oz. can(s) crushed tomatoes
  • 2 - tsp minced garlic
  • 1 - Tbsp chili powder
  • - Salt and pepper
  • Side: - dinner rolls**

Cooking Directions for Single Meal

  1. Dice the onion. Slice the zucchini. Peel and slice the whole carrots.
  2. In a large saucepan or Dutch oven, add the chicken breasts, diced onion, zucchini slices, carrot slices, chicken stock, crushed tomatoes, minced garlic, chili powder, salt and pepper. Bring to a bubbling, then reduce heat and let simmer about 30 minutes or until chicken is cooked through. Use 2 forks to shred the chicken into bite size pieces.
  3. Warm the dinner rolls.
  4. Serve Chicken & Veggie Chili with dinner rolls.

Freezeasy Meal Prep Directions

  1. Dice 2 white onions. Slice 2 zucchini. Peel and slice 8 whole carrots.
  2. Open 2 cans of crushed tomatoes.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 3 large boneless, skinless chicken breasts
  • Half of the chopped white onions
  • Half of the zucchini slices
  • Half of the carrot slices
  • 4 cups chicken stock
  • Half of the canned crushed tomatoes
  • 2 tsp minced garlic
  • 1 Tbsp chili powder
  • Salt and pepper

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to saucepan or Dutch oven to cook the chicken. Once the chicken is cooked, shred it with 2 forks before serving.

If you would prefer to not add chicken stock to your baggie, make a note on your label or bag to add at the time of cooking.
