Crispy Cheddar Chicken Bake

Kid friendly ALERT! This chicken will be devoured by not only the kids in your family, but by you as well! Bringing together the tangy shredded cheese with the flavor punch from chives and the buttery smoothness of crushed Ritz crackers. It’s a perfect coating for baked chicken. Enjoy!

Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • 16 - Ritz crackers
  • 1 1/2 - cup(s) shredded cheddar cheese
  • 1 - tsp minced garlic
  • 1 - Tbsp chives
  • - Salt and pepper
  • 4 - Tbsp melted butter
  • Side: - dinner rolls**
  • Side: - veggies**
  • 1 - 9x13 disposable foil tray(s)

Cooking Directions for Single Meal

  1. Preheat the oven to 350 F.
  2. Melt the butter. Crush the crackers into crummy pieces. If needed, chop the chives.
  3. Lightly pound the chicken breasts to about 1/2-inch thick. If preferred, cut in half to make “tender” size pieces of chicken.
  4. In a small mixing bowl, combine the crushed crackers, shredded cheese, minced garlic and chopped chives.
  5. Place the melted butter in another bowl. Dip the chicken into the melted butter, then coat with the cracker mixture, and then place into baking dish.
  6. Bake in the preheated oven for 30 to 35 minutes, or until chicken is cooked through.
  7. Warm the dinner rolls.
  8. Prepare veggies.
  9. Serve Crispy Cheddar Chicken Bake with dinner rolls and veggies.

Freezeasy Meal Prep Directions

  1. Melt 8 Tbsp butter and place into shallow bowl. Crush 32 crackers into crummy pieces. If needed, chop 2 Tbsp chives.
  2. In a small mixing bowl, combine the crushed crackers, 3 cups of shredded cheese, 2 tsp minced garlic and the chopped chives.

To each disposable tray, add the following ingredients:

  • Half of the prepared chicken pieces into each tray

Cover with foil or lid, add label and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the oven and baking as directed.
