With this yummy make ahead freezer meal, we are unrolling Egg Rolls and making the ground beef and veggie mixture that is served over a bed of rice. It’s all the best flavors of an egg roll, without being wrapped up!

Ingredients for Single Meal

  • 1 - lb(s) ground beef
  • 1 - Tbsp minced onion
  • 1 - tsp garlic powder
  • 1 - tsp ground ginger
  • 1 - 12 oz. jar stir-fry sauce
  • 1 - 10 oz bag matchstick carrots
  • 1 - 10 oz bag coleslaw mix
  • - Salt and pepper
  • Garnish: - green onion(s)**
  • Side: - rice**
  • Side: - salad**
  • 1 - gallon-size freezer baggie(s)**

Cooking Directions for Single Meal

  1. In a large skillet, brown the ground beef with the minced onion, garlic powder, and ground ginger. Drain if needed, and return to the skillet. Stir in the stir-fry sauce and toss with the ground beef. Then stir in the matchstick carrots and coleslaw mix and combine with the beef. Cover with a tight fitting lid and cook for 8 to 10 minutes, or until carrots are tender and coleslaw has melted into the sauce. Keep warm until ready to serve. Season with salt and pepper to taste.
  2. Cook the rice.
  3. Prepare the salad.
  4. Serve Egg Roll Bowls with rice, ground beef and veggies on top with a green onion garnish. Serve the salad on the side.

Freezeasy Meal Prep Directions

  1. Seed and chop 2 green bell peppers.
  2. Brown 2 lbs. ground beef with 2 Tbsp minced onion, 2 tsp garlic powder, and 2 tsp ground ginger. Drain and set aside to cool.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the browned ground beef
  • 1 - 12 oz. jar stir-fry sauce
  • 1 - 10 oz. bag matchstick carrots
  • 1 - 10 oz. bag coleslaw mix

Remove as much air as possible and seal. Add a label to the baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze for up to 6 months in the fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the skillet to reheat and cook the veggies.
