A twist on marinara sauce - perfect for when you find eggplants on sale! Could be served on pasta or with bread.

- 1 - large eggplant(s)
- 1 - tsp salt
- 1 - Tbsp olive oil
- 1 - tsp Italian seasoning
- 1 - tsp minced onion
- 1 - tsp garlic powder
- 1 - 28 oz. can(s) crushed tomatoes

Cooking Directions for Single Meal
- Place the diced eggplant into a colander in the kitchen sink and sprinkle 1 tsp salt over liberally. *Let sit for 30 minutes and then rinse with cold water.
- Cook pasta as directed.
- In large skillet, add the olive oil and saute the rinsed eggplant with the Italian seasoning, minced onion and garlic powder for 5 to 7 minutes. Deglaze the skillet with 1/4 cup of water, then stir in the crushed tomatoes. Let simmer for 5 minutes to allow flavors to mingle.
- Prepare veggies.
- Serve Eggplant Marinara over pasta with veggies.

- Dice 2 eggplants and place in colander. Add 2 tsp salt and let sit for 30 minutes, then rinse.
To each gallon-size plastic freezer baggie, add the following ingredients:
- Half of the salted & rinsed eggplant pieces
- 1 Tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp minced onion
- 1 tsp garlic powder
- 1 - 28 oz. can of crushed tomatoes
- Salt and pepper to taste
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the skillet for reheating.
Special notes
Substitute the eggplant for 2 shredded zucchinis or 4 shredded carrots, if you want alternative veggies for the sauce.

Thaw and add contents of baggie to skillet. Bring to bubbling over medium high heat and then reduce to low and simmer for 20 minutes, or until eggplant is softened.
