Garlic & Herb Cod {Keto}

This Garlic and Herb butter sauce can be used with any fresh fish, but we especially love it with cod. Also, we’ve noted the the lemon zest garnish is optional, but we highly recommend it. The lemon will bring up the flavors of the butter-herb sauce with each bite you take. Enjoy!

Ingredients for Single Meal

  • 4 - 4 oz. cod filet
  • - Salt and pepper
  • 6 - Tbsp butter
  • 2 - tsp minced garlic
  • 1/2 - tsp onion powder
  • 1 - tsp dried basil
  • 1 - tsp dried oregano
  • Garnish: - lemon zest**
  • Side: - salad**
  • Side: - cauliflower rice**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Cook rice, as directed.
  2. Preheat oven to 400 F.
  3. Melt the butter in small saucepan and stir in the garlic, onion powder, basil and oregano. Simmer on low for 2 to 3 minutes to allow flavors and fragrances to mingle.
  4. Place the cod fillets into a small baking dish and season with salt and pepper. Pour the melted herb-butter over the cod fillets, spooning on top so they are completely coated.
  5. Bake in the preheated oven for 15 to 20 minutes, or until cod is white and flaky all the way through. Add a dash of lemon zest to each piece, as optional garnish.
  6. Prepare the salad.
  7. Serve Keto Garlic & Herb Cod with cauliflower rice and side salad.

Freezeasy Meal Prep Directions

  1. Melt 12 Tbsp butter in small saucepan and stir in 4 tsp minced garlic, 1 tsp onion powder, 2 tsp basil and 2 tsp oregano.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 - 4 oz. cod fillets
  • Half of the butter-herb sauce

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring the cod and butter sauce to baking dish. Bake at 400 F for 15 to 20 minutes.

Special notes

Make with preferred butter substitute and serve with cauliflower ‘rice’ for Paleo/Whole30/Keto meal.
