Grilled Brown Sugar Chicken Thighs

The best part about this chicken - the way that the homemade marinade caramelizes and catches thes smokiness from the grill. You end up with perfectly glazed and ridiculously tasty grilled chicken. This marinade would totally work with 4 large or 8 thin chicken breasts too!
Ingredients for Single Meal
- 12 - boneless chicken thighs
- 1/2 - cup(s) soy sauce
- 1/3 - cup(s) brown sugar
- 2 - Tbsp olive oil
- 2 - Tbsp vinegar
- 2 - tsp minced garlic
- 1/2 - tsp ground ginger
- - Salt and pepper
- Side: - garlic bread**
- Side: - salad**

Cooking Directions for Single Meal
- In a large mixing bowl, whisk together the soy sauce, brown sugar, olive oil, vinegar, minced garlic, ground ginger and a pinch of salt and pepper, each.
- Place the chicken into baking dish or plastic baggie and pour the marinade over the top. Cover with plastic wrap or seal, and marinate in the fridge for at least 1 hour, or ideally overnight.
- Heat the grill and add the chicken thighs over the direct heat, and use tongs to flatten as best you can. Brush the tops with the marinade and discard remaining marinade. Let cook for 4 to 5 minutes per side, then move over indirect heat and grill until cooked through. Slice before serving.
- Prepare the salad.
- Prepare the garlic bread. (It’s delicious when grilled.)

- In a large mixing bowl, whisk together the 1 cup soy sauce, 2/3 cup brown sugar, 4 Tbsp olive oil, 4 Tbsp vinegar, 4 tsp minced garlic, 1 tsp ground ginger, and a pinch of salt and pepper, each.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 12 chicken thighs
- Half of the prepared marinade
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the grill and grilling as directed and until cooked through.
