This grilled chicken is just perfection. The homemade marinade calls for ingredients you already have in your pantry and fridge. The longer you marinate the better - we recommend overnight in the fridge, but if you only have 1 hour that will do. Enjoy!

  • 4 - small boneless chicken breasts
  • 1/4 - cup(s) honey
  • 1/4 - cup(s) spicy mustard
  • 2 - Tbsp olive oil
  • 1 - Tbsp red wine vinegar

Cooking Directions for Single Meal

  1. In a small mixing bowl, whisk together the honey, spicy brown mustard, olive oil, and red wine vinegar. Whisk well to create a marinade.
  2. Place the chicken breasts into a shallow baking dish or plastic baggie and pour the marinade over the top. Cover with plastic wrap or seal, and marinate in the fridge for at least 1 hour, but ideally overnight.*
  3. Preheat the grill and add the marinated chicken breasts over the direct heat. Brush the top with the marinade, and discard remaining marinade. Let cook for 4 to 5 minutes per side, then move over indirect heat and grill until cooked through. Slice before serving.
  4. Prepare the salad.
  5. Prepare the garlic bread.
  6. Serve Grilled Honey Mustard Chicken with salad and garlic bread.

Freezeasy Meal Prep Directions

  1. In a small mixing bowl, whisk together 1/2 cup honey, 1/2 cup spicy brown mustard, 4 Tbsp olive oil, and 2 Tbsp red wine vinegar. Whisk well to create a marinade.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 small chicken breasts
  • Half of the prepared marinade

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw chicken breasts completely in the fridge overnight, before transferring to the grill and grilling as directed and until cooked through. Discard excess marinade.
