Cooking Directions for Single Meal
- Open and drain the juices from the peaches. Cut 4 slices into bite-size pieces. (Set aside the rest to serve as a side dish.)
- In a small mixing bowl, combine the BBQ sauce, diced peaches, and minced garlic.
- Cut salmon fillet into individual serving portions. Place in small baking dish and season with salt and pepper. Pour the BBQ-peach sauce over the salmon. Let marinate for at least 30 minutes.
- Preheat the grill. Place the salmon and sauce onto the grill and brush additional sauce over the top. Discard excess marinade/sauce. Grill salmon, skin side down over direct heat for 8 to 10 minutes, or until cooked through. Grilling time will vary depending on the thickness of the salmon fillet.
- Prepare the salad and fruit.

- Cut 2 lbs. of salmon fillet into 8 pieces.
- Open and drain 2 cans of sliced peaches. Drain well and cut 8 peach slices into bite-size pieces.
- In a small mixing bowl, combine 2 cups BBQ sauce, the diced peaches, and 2 tsp minced garlic.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 4 salmon pieces
- Salt and pepper
- Half of the prepared BBQ-peach sauce
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw completely in the fridge overnight, before transferring the salmon and marinade to the grill. Grill over direct heat as directed. Discard excess marinade.
