A childhood favorite, made easy with the Instant Pot! It’s not dry (like it can be from the oven) and it’s got all the same amazing flavors rolled up in a delicious meal. We recommend using a steamer rack and cooking the chicken rolls “above the stock,” but if you don’t have one, you can nestle them into the stock. Also, no toothpicks required! These are super easy to prep for the freezer and can be pressure cooked from frozen. *high five* Enjoy!

Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • - Salt and pepper
  • 8 - slices ham deli meat
  • 4 - slices Swiss cheese
  • 1/2 - cup(s) melted butter
  • 1 - cup(s) Italian breadcrumbs
  • 1 - cup(s) chicken stock
  • Side: - rice**

Cooking Directions for Single Meal

  1. Lightly pound out the the chicken breasts, to about half-inch thick, so that you can roll them up with the ham and cheese. Pour the chicken stock into the electric pressure cooker insert and add the steamer rack. (You can place the rolled chicken directly into the stock, but we recommend using a steamer rack if you have one.)
  2. Set out a shallow dish with the melted butter and another shallow dish with the breadcrumbs.
  3. Place 2 ham slices and 1 cheese slice onto each pounded chicken and roll up tight. Dip the tops into the butter and then roll in the breadcrumbs and nestle onto the steamer rack.
  4. Steam valve: Sealing.
  5. Cook on: Manual/High for 10 minutes.
  6. Release: Natural release, at least 5 minutes.
  7. Cook the rice as directed.
  8. Prepare veggies.
  9. Serve Instant Pot Chicken Cordon Bleu with side of rice and veggies.

Freezeasy Meal Prep Directions

    To each gallon-size plastic freezer baggie in a round bowl/dish, add the following ingredients:

    • 4 rolled and dipped chicken breasts, nestled tightly together
    • Do not add the chicken stock to the freezer baggie.

    Remove as much air as possible and seal. Add label to baggie and freeze.

    Freeze & Thaw Instructions

    Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before adding the rolled chicken onto the steamer rack with chicken stock underneath. Pressure cook as directed. If cooking from frozen, pressure cook for 15 to 18 minutes.

    Add 5-10 minutes of pressure cooking time, if cooking from completely frozen or mostly frozen. Note that preheat time and release time may vary by appliance.
