Instant Pot Chicken & Sausage Alfredo

Super simple, but oh-so-flavorful, pasta skillet meal! You’ll get the “base” of the meal into the freezer, then add the pasta, cream and cheeses on the day you wish to serve it. Enjoy!

Ingredients for Single Meal

  • 2 - large boneless chicken breasts
  • 2 - smoked sausage links
  • 3 - cup(s) chicken stock broth
  • 1 - Tbsp Cajun seasoning
  • 2 - tsp garlic powder
  • 16 - oz. small shell pasta**
  • 2 - cup(s) heavy cream**
  • 1 - cup(s) Parmesan cheese**
  • 2 - cup(s) shredded mozzarella cheese**
  • - Salt and pepper
  • Side: - salad**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Cut the chicken breasts into bite-size pieces. Slice the smoked sausage.
  2. Place the chicken & sausage pieces into the electric pressure cooker insert with the chicken stock.
  3. Add the Cajun seasoning, garlic powder and a pinch of salt and pepper and swirl through. Then pour in the pasta and press it into the broth. If needed, add 1/4 to 1/2 cup more water so that the pasta shells are all
  4. Steam valve: Sealing.
  5. Cook on: Manual/High for 8 minutes.
  6. Release: Natural or Quick.
  7. Once the chicken and pasta is al dente, stir in the cream, mozzarella cheese, and Parmesan cheese and leave on warm mode, while you stir it through and make creamy sauce. Season with salt and pepper to taste.
  8. Prepare the salad.
  9. Serve Instant Pot Chicken & Sausage Alfredo with side salad.

Freezeasy Meal Prep Directions

  1. Cut 4 chicken breasts into bite-size pieces. Slice 4 smoked sausage links.

To each gallon-size plastic freezer baggie in a round bowl/dish, add the following ingredients:

  • Half of the diced chicken breasts
  • Half of the sliced smoked sausage
  • 1 Tbsp Cajun seasoning
  • 2 tsp garlic powder
  • 3 cups chicken stock
  • Do NOT add the pasta, cream or cheeses before freezing.

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before adding contents of bag plus water to electric pressure cooker insert. Pressure cook as directed.
