Instant Pot Cuban Chicken

This Cuban style marinade is unique and delicious, and is perfect for slow cooked chicken. You could also cook this chicken and sauce in the Instant Pot, Dutch oven, or bake it in the oven. It is a versatile chicken and you will love it! Enjoy!

Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • 1/2 - cup(s) hot water**
  • - Salt and pepper
  • 1/4 - cup(s) orange juice
  • 3 - Tbsp lime juice
  • 2 - tsp minced garlic
  • 2 - tsp paprika
  • 1 - tsp dried oregano
  • 1 - tsp onion powder
  • 1 - tsp ground cumin
  • Side: - rice**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. In a small mixing bowl, whisk together the orange juice, lime juice, minced garlic, paprika, dried oregano, onion powder and ground cumin.
  2. Place the chicken breasts into the electric pressure cooker insert with the hot water. Pour the sauce over the top.
  3. Steam valve: Sealing.
  4. Cook on: Manual/High for 15 minutes.
  5. Release: Natural or Quick.
  6. Once done cooking, shred the chicken into the sauce. Strain, if needed.
  7. Cook the rice, as directed.
  8. Prepare veggies.
  9. Serve Instant Pot Cuban Chicken over rice with veggies.

Freezeasy Meal Prep Directions

  1. In a small mixing bowl, whisk together 1/2 cup orange juice, 6 Tbsp lime juice, 4 tsp minced garlic, 4 tsp paprika, 2 tsp dried oregano, 2 tsp onion powder, and 2 tsp ground cumin.

To each gallon-size plastic freezer baggie in a round bowl/dish, add the following ingredients:

  • 4 boneless chicken breasts
  • Salt and pepper
  • Half of the prepared marinade into each bag

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before adding contents of bag plus water to electric pressure cooker insert. Pressure cook as directed. If cooking from frozen, add 6-8 minutes to cooking time.
