Ingredients for Single Meal

  • 1 - 15 oz can(s) chickpeas
  • 3 - medium sweet potatoes
  • 4 - whole carrots
  • 1 - 15 oz. can(s) sweet peas
  • 2 - cup(s) vegetable broth
  • 2 - Tbsp curry powder
  • 1 - tsp garlic powder
  • 1 - tsp ground ginger
  • - Salt and pepper
  • Garnish: - bunch cilantro**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Open and drain the chickpeas and sweet peas.
  2. Peel and cut the carrots into 1-inch pieces.
  3. Peel and cut the sweet potatoes into 1/2-inch pieces. If they are larger pieces than this, you might need to increase the cook time by 2-3 minutes.
  4. Add the chopped veggies and other ingredients (except the garnish and sides) to the Instant Pot insert.
  5. Set to Sealing.
  6. Cook on Manual, High for 10 minutes.
  7. Release: natural.
  8. Prepare veggies.
  9. Serve Instant Pot Curried Chickpeas with a side of fresh veggies.

Freezeasy Meal Prep Directions

  1. Peel and dice 6 sweet potatoes.
  2. Peel and slice 8 whole carrots.
  3. Open and drain 2 cans of chickpeas. Open and drain 2 cans of sweet peas.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the cans of chickpeas
  • Half of the diced sweet potatoes
  • Half of the sliced carrots
  • Half of the cans of peas
  • 2 cups vegetable broth
  • 1 Tbsp curry powder
  • 1 tsp ground ginger
  • 1 tsp garlic powder

Remove as much as air as possible and seal.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the Instant Pot and cooking on Manual, High for 10 minutes. Let naturally release.

You could use chicken broth in place of the vegetable broth, if preferred.
