  • 2 - lb(s) pork tenderloin
  • 1/2 - cup(s) hot water
  • - Salt and pepper
  • 1 - 28 oz. can(s) crushed tomatoes
  • 1 - 7 oz. jar(s) red peppers
  • 3 - tsp minced garlic
  • 2 - Tbsp Italian seasoning
  • Side: - pasta**

Cooking Directions for Single Meal

  1. Open the can of crushed tomatoes. Drain the jar of roasted red peppers.
  2. Place the pork tenderloin into the base of the electric pressure cooker insert with the hot water and season with salt and pepper. Pour the crushed tomatoes, drained roasted red peppers, minced garlic and Italian seasoning over the pork tenderloin.
  3. Steam valve: Sealing.
  4. Cook on: Manual/High for 40 minutes.
  5. Release: Natural or Quick.
  6. Once finished cooking, shred the pork with 2 forks and mix into the ragu sauce.
  7. Cook the pasta as directed.
  8. Prepare the salad.
  9. Serve Instant Pot Pulled Pork Ragu over pasta with salad.

Freezeasy Meal Prep Directions

  1. Open 2 cans of crushed tomatoes.
  2. Open and drain 2 jars of roasted red peppers.

To each gallon-size plastic freezer baggie in a round bowl/dish, add the following ingredients:

  • 2 lb. pork tenderloin
  • Salt and pepper
  • 1 - 28 oz. can crushed tomatoes
  • 1 - 7 oz. jar roasted red peppers
  • 3 tsp minced garlic
  • 2 Tbsp Italian seasoning

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before adding contents of bag plus water to electric pressure cooker insert. Pressure cook as directed.
