  • 2 - 4 oz. can(s) green chiles

Cooking Directions for Single Meal

  1. In a small mixing bowl, combine the brown sugar, minced onion, chili powder and ground cumin.
  2. Place the pork roast into the electric pressure cooker insert with the hot water. Season with salt and pepper. Then add the spice mixture directly onto the pork. Top with cans of green chilies onto the pork roast.
  3. Steam valve: Sealing.
  4. Cook on: Manual/High for 40 minutes.
  5. Release: Natural or Quick.
  6. Warm the dinner rolls.
  7. Prepare the salad.
  8. Serve Instant Pot Southwestern Pork Roast with dinner rolls and salad.

Freezeasy Meal Prep Directions

  1. In a small mixing bowl, combine 4 Tbsp brown sugar, 4 Tbsp minced onion, 2 Tbsp chili powder and 2 Tbsp ground cumin.
  2. Open 4 cans of green chilies.

To each gallon-size plastic freezer baggie in a round bowl/dish, add the following ingredients:

  • 2 lb. pork roast
  • Salt and pepper
  • Half of spice mixture
  • Half of the canned green chilies

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before adding contents of bag plus water to electric pressure cooker insert. Pressure cook as directed.
