Szechuan dishes are all about the garlic and the chili powders. For this freezer friendly version, we’ve dialed it back a little to be more family friendly, kid friendly, and a delicious version that uses sauces and spices you already have on hand! Enjoy!

Ingredients for Single Meal

  • 1 1/2 - lb(s) sirloin steak
  • 3/4 - cup(s) hot water**
  • 1 - Tbsp rice vinegar
  • 3 - Tbsp soy sauce
  • 1 - tsp minced garlic
  • 1 - tsp crushed red pepper
  • 1 - small white onion(s)
  • 2 - Tbsp canola oil**
  • 2 - cup(s) frozen broccoli florets
  • 1 - Tbsp cornstarch**
  • Garnish: - chopped peanuts**
  • Side: - rice**
  • Side: - frozen egg rolls**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Thinly slice the sirloin steak, slicing across the grain of the meat. Place into shallow dish for marinating.
  2. Cook rice and egg rolls, as directed.
  3. In a small mixing bowl, whisk together the rice vinegar, soy sauce, minced garlic, crushed red pepper. Pour the marinade over the sliced beef and let marinate in the fridge for at least 30 minutes.*
  4. Cut the small white onion into half-inch pieces.
  5. Add the beef slices, onion slices, frozen broccoli, marinade and hot water into the electric pressure cooker insert.
  6. Steam valve: Sealing.
  7. Cook on: Manual/High for 6 minutes.
  8. Release: Natural or Quick.
  9. In a small bowl, stir the 1 Tbsp cornstarch with 2 Tbsp warm water, then swirl into the sauce in the skillet.
  10. Let sit on warm mode for 5-8 minutes while sauce thickens.
  11. *Cornstarch amount may need to be adjusted if there is a lot of liquid after pressure cooking.
  12. Serve Instant Pot Szechuan Beef over rice with side of egg rolls.

Freezeasy Meal Prep Directions

  1. Thinly slice 3 lbs of sirloin steak, slicing across the grain of the meat.
  2. Dice 2 small white onions into half-inch pieces.
  3. In a small mixing bowl, whisk together 2 Tbsp rice vinegar, 6 Tbsp soy sauce, 2 tsp minced garlic, 2 tsp crushed red pepper.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the sliced steak pieces
  • Half of the prepared marinade
  • Half of the diced onions
  • 2 cups frozen broccoli

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before adding contents of bag plus water to electric pressure cooker insert. Pressure cook as directed.

Thaw, add hot water to Instant Pot and then add contents of baggie. Cook on high pressure for 6 minutes with sealed valve; then natural release.
