My kids love taco soup and I love how easy it is to make.

Ingredients for Single Meal

  • 1 - lb(s) ground beef
  • 1 - 15 oz. can(s) black beans
  • 1 - 15 oz. can(s) diced tomatoes
  • 1 - 15 oz. can(s) corn
  • 2 - Tbsp chili powder
  • 1 - tsp ground cumin
  • 1 - tsp garlic powder
  • 1 - tsp onion powder
  • - Salt and pepper
  • Garnish: - corn tortilla chips**
  • Garnish: - shredded cheese**
  • Side: - veggies**
  • 2 - cup(s) chicken broth
  • 1 - cup(s) hot water**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. In a large saucepan, brown and drain the ground beef. Drain and add the browned ground beef to the pressure cooker insert.
  2. Add the black beans, corn, diced tomatoes, and chicken broth into the electric pressure cooker insert.
  3. Stir in the chili powder, ground cumin, garlic powder, onion powder and hot water in with the other ingredients.
  4. Steam valve: Sealing.
  5. Cook on: Manual/High for 15 minutes.
  6. Release: Natural or Quick.
  7. Serve Instant Pot Taco Soup, with crushed tortilla chips and cheese as garnish, with a side of veggies.

Freezeasy Meal Prep Directions

  1. Brown and drain 2 lbs. ground beef.
  2. Open, drain and rinse 2 cans of black beans.
  3. Open 2 cans of diced tomatoes.
  4. Open and drain 2 cans of corn.

To each gallon-size plastic freezer baggie in a round bowl/dish, add the following ingredients:

  • Half of the browned ground beef into each bag
  • 15 oz. can black beans, drained and rinsed
  • 15 oz. can diced tomatoes, undrained
  • 15 oz. can corn, drained
  • 2 Tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups chicken broth or equivalent bouillon base plus water

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to pressure cooker insert with hot water.

Special notes

Add 5-10 minutes of pressure cooking time, if cooking from completely frozen or partially frozen. Note that preheat time and release time may vary by appliance. See myfreezeasy.com/EPC for more tips and tricks.

Thaw, add hot water to Instant Pot and then add contents of baggie. Cook on high pressure for 15 minutes with sealed valve; then natural release.
Add crushed tortilla chips and/or shredded cheese as optional garnish.
