Cooking Directions for Single Meal

  1. Preheat the oven to 400 F.
  2. Cook rice, as directed.
  3. Chop the parsley.
  4. In a small mixing bowl, whisk together the lemon juice, Dijon mustard and chopped parsley.
  5. Place the salmon fillet or pieces into small baking dish and pour the lemon marinade over the top. Sprinkle with salt and pepper.
  6. Bake in the preheated oven for 15 to 20 minutes, or until salmon is flaky and cooked through.
  7. Prepare salad.
  8. Serve Lemon Dijon Salmon with rice and salad.

Freezeasy Meal Prep Directions

  1. Cut salmon into 4 pieces, if needed.
  2. Chop 2 Tbsp parsley.
  3. In a small mixing bowl, whisk together 1/2 cup lemon juice, 2 Tbsp Dijon mustard and 2 Tbsp chopped parsley.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 salmon pieces
  • Half of the lemon marinade
  • Salt and pepper

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw completely in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to baking dish and baking at 400 F for 15 to 20 minutes.
