Cooking Directions for Single Meal
- Cook rice, as directed.
- Preheat oven to 400 F.
- Place the cod fillets small baking dish and season with salt and pepper.
- In a small mixing bowl, whisk together the lemon juice, olive oil, dried parsley, and dried oregano. Pour directly onto the cod fillets in the baking dish. Slice the lemon and lay the slices on top of the herbs and cod.
- Bake in the preheated oven for 15 to 20 minutes, or until cod is flaky and no longer translucent.
- Prepare the salad.
- Serve Lemon Herbed Cod with salad and rice.

- Slice 2 lemons.
- In a small mixing bowl, whisk together the 6 Tbsp lemon juice, 4 Tbsp olive oil, 2 tsp dried parsley, and 2 tsp dried thyme.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 4 cod filets
- Salt and pepper
- Half of lemon-herb sauce
- Lemon slices, on top of the herbs and cod
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring the cod, sauce and lemon slices to baking dish. Bake at 400 F for 15 to 20 minutes.
