  • 2 - large boneless chicken breasts
  • 1 - egg(s)
  • 1 - cup(s) breadcrumbs
  • 2 - 15 oz. can(s) tomato sauce
  • 1 - Tbsp Italian seasoning
  • 1 - tsp garlic powder
  • to taste - Salt and pepper
  • 1/2 - cup(s) Parmesan cheese

Cooking Directions for Single Meal

  1. Preheat oven to 350 F. Lightly spray a 7x11 or 9x13-inch baking dish.
  2. Cut the chicken breasts in half. Dip chicken in beaten egg, then dredge with breadcrumbs. Place in the baking dish or disposable tray.
  3. In a small mixing bowl, whisk together the tomato sauce, Italian seasonings and garlic powder. Add a little salt and pepper to the sauce, then pour it over the chicken in the tray.
  4. (Note: you could substitute a 26 oz. jar spaghetti sauce in place of the homemade sauce. Be sure to update the shopping list if you make this substitution.)
  5. Sprinkle the grated Parmesan cheese over the top.
  6. Bake in the preheated oven for 40 to 45 minutes, or until chicken is cooked through. Cooking time will vary depending on thickness of the chicken breasts.
  7. Serve Lightened Up Chicken Parmesan with side of pasta and veggies.

Freezeasy Meal Prep Directions

  1. Cut the 4 chicken breasts in half, then coat the chicken pieces in the beaten eggs and breadcrumbs.
  2. Whisk together the 4 - 15 oz. cans tomato sauce, 2 Tbsp Italian seasoning, 2 tsp garlic powder and some salt and pepper in a small bowl.

To 9x13 disposable freezer safe tray, add the following ingredients:

  • Coated chicken pieces, half into each tray
  • Prepared tomato sauce over the top of the chicken, half into each tray
  • 1/2 cup grated Parmesan cheese, sprinkled on top

Cover with foil or lid. Add label to top and freeze.

Freeze & Thaw Instructions

Pull out the bag the night before and thaw overnight in the fridge. Cook as directed. If only partially thawed, keep covered and bake for an additional 20-30 minutes or until chicken is cooked through.

Dairy-Free Modifications

Omit the cheese.

Gluten-Free Modifications

Use gluten-free breadcrumbs and serve with gluten-free pasta.
