Mediterranean Beef Stew

Let’s whisk off to the Mediterranean by bringing the smells and flavors right into our own kitchens. This beef stew can be made in the Dutch oven, or also in the slow cooker. (Set on low and cook for 8 hours!) We hope you enjoy it as much as we did!

Ingredients for Single Meal

  • 2 - lb(s) stew beef
  • 2 - Tbsp minced onion
  • 2 - tsp minced garlic
  • 1 - 15 oz. can(s) artichoke hearts
  • 1 - 15 oz. can(s) tomato sauce
  • 1 - 15 oz. can(s) diced tomatoes
  • 1/2 - cup(s) whole green or black olives
  • 1 - tsp dried oregano
  • 1 - tsp dried basil
  • 1 - bay leaf
  • 2 - cup(s) beef broth
  • - Salt and pepper
  • Garnish: - feta cheese crumbles**
  • Side: - Greek salad**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Open and drain the cans of diced tomatoes and artichoke hearts. Open the tomato sauce.
  2. In a large saucepan, add all the ingredients and bring to boiling and then reduce heat to medium low and let simmer for 20 minutes, stirring often. Remove the bay leaf, before serving. Season with salt and pepper to taste. Top each bowl with crumbled feta cheese.
  3. Prepare the Greek salad.
  4. Serve Mediterranean Beef Stew with feta cheese garnish and Greek salad.

Freezeasy Meal Prep Directions

  1. Open and drain 2 cans of diced tomatoes and 2 cans/jars of artichoke hearts. Open 2 cans of tomato sauce.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 2 lbs. stew beef cubes
  • 2 Tbsp minced onion
  • 2 tsp minced garlic
  • 1 - 15 oz. can artichoke hearts, drained
  • 1 - 15 oz. can tomato sauce
  • 1 - 15 oz. can diced tomatoes, drained
  • 1/2 cup whole black olives
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 bay leaf
  • 2 cups beef broth

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring all of the contents of the baggie into large saucepan or Dutch oven. Bring to bubbling and cook over low heat for 20 minutes.

Dairy-Free Modifications

Recipe is dairy-free when the shredded feta cheese garnish is omitted.
