I love the taste of orange peel Thai simmer sauce on chicken!  Have you tried it?  It’s bursting with flavor!  And, this recipe is easily frozen, which makes it an easy dish for busy weeknights!

Ingredients for Single Meal

  • 1 - Tbsp canola oil
  • 1 - lb(s) boneless chicken breasts
  • 12 - oz. Thai orange simmer sauce
  • 16 oz. - oz. bag(s) frozen stir-fry veggies
  • Side: - rice**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. In a large skillet or wok, heat the oil and then brown the chicken strip pieces. Add the Thai orange simmer sauce. Stir in the frozen veggies and cook them in the chicken-sauce, tossing often. Let simmer for about 15 minutes, until chicken is cooked through.
  2. Cook rice, as directed. (Brown rice can take up to 50 minutes, so plan accordingly.)*
  3. Serve Orange Thai Chicken over rice.

Freezeasy Meal Prep Directions

  1. Slice 2 lbs. boneless, skinless chicken breast into strips.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the chicken pieces
  • 1 Tbsp canola oil
  • 12 oz. jar Thai orange simmer sauce
  • 16 oz. bag frozen stir-fry veggies

Remove as much as air as possible and seal.

Freeze & Thaw Instructions

Thaw in the fridge overnight. Add the contents of the freezer baggie to the skillet or wok. Bring sauce to bubbling over medium high heat and then reduce to low and simmer for 20 minutes or until chicken is cooked through.

Special notes

Look for Thai orange simmer sauce on the Asian aisle or at an international market. You could substitute with another Thai simmer sauce, if needed.
