- 12 - boneless chicken tenderloins
- 1 - Tbsp olive oil
- 1/2 - cup(s) white cooking wine
- 1/2 - cup(s) chicken stock
- 3 - Tbsp spicy mustard

- Garnish: - Parmesan cheese**

Cooking Directions for Single Meal
- Cut the chicken breasts into bite-size pieces.
- In a large mixing bowl, whisk together the olive oil, white cooking win, chicken stock, spicy mustard, and Italian seasoning. Add a pinch of salt and pepper.
- Place the chicken pieces into the sauce and let marinate in the fridge for 30 minutes, or overnight if possible.
- In a large skillet over high heat, sear both sides of the chicken pieces for 2 to 3 minutes. Pour about 1 cup of the marinade into the skillet with the chicken, and discard the remainder. Bring to bubbling and let simmer about 5 to 7 minutes, or until chicken is cooked through. Once cooked, add a dusting of Parmesan cheese to each piece of chicken.
- Cook the rice, as directed.
- Prepare the salad.

To each gallon-size plastic freezer baggie, add the following ingredients:
- 12 chicken tenderloins
- 1 Tbsp olive oil
- 1/2 cup white cooking wine
- 1/2 cup chicken stock
- 3 Tbsp spicy mustard
- 1 Tbsp Italian seasoning
- Salt and pepper
Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes. Transfer the chicken to skillet and sear over high heat, add the marinade and simmer over medium heat for 5 to 7 minutes, or until chicken is cooked through.
Special notes
You could replace the chicken tenderloins with 4 thin-sliced chicken breasts.
