- 1 - lb(s) ground beef
- 1 - small white onion(s)
- 2 - 15 oz. can(s) red kidney beans
- 1 - 28 oz. can(s) crushed tomatoes
- 2 - Tbsp chili powder
- - Salt and pepper
- 1 - cup(s) quinoa**
- 2 - cup(s) beef stock**
- Garnish: - shredded cheese**
- Side: - salad**

Cooking Directions for Single Meal
- Dice the onion.
- Open and drain the 2 cans of red kidney beans. Open the cans or crushed tomatoes.
- Place the quinoa into colander in the sink and rinse it well. Let it sit until ready to add to chili.
- In a large saucepan, brown the ground beef with salt and pepper. Drain and return to saucepan. Stir in the crushed tomatoes, drained red kidney beans, and 1 cup of hot water. Stir in the diced onion and chili powder. Bring to bubbling.
- Once bubbling, stir in the quinoa and beef broth. Return to bubbling, then reduce heat and cook on low for 20 minutes.
- Prepare the salad.
- Serve Quinoa Chili with shredded cheese garnish and salad.

- Brown 2 lbs. ground beef.
- Dice 2 small white onions.
- Open 2 cans of crushed tomatoes.
- Open and drain 4 cans of red kidney beans.
To each gallon-size plastic freezer baggie, add the following ingredients:
- Half of the browned ground beef
- Half of the drained red kidney beans
- Half of the crushed tomatoes
- Half of the diced onions
- 2 Tbsp chili powder
- Salt and pepper
- Do not add the quinoa and beef stock to the freezer bag. Keep in pantry until cook day.
Remove as much air as possible and seal. Add label to baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to a saucepan to reheat and cook in the quinoa.
Dairy-Free Modifications
Omit cheese garnish for dairy-free meal.
Gluten-Free Modifications
Recipe is gluten-free when served with gluten-free sides.
