  • 3 - Tbsp balsamic vinegar

Cooking Directions for Single Meal

  1. Preheat the oven to 400 F. Place the chicken breasts into the baking dish and season with salt and pepper.
  2. In a small mixing bowl, whisk together the olive oil, balsamic vinegar, and raspberry preserves. Pour the marinade/sauce directly onto the chicken breasts, coating each one. *Place the chicken and sauce into the fridge and let marinate at least 1 hour.
  3. Bake in the preheated oven for 50 to 60 minutes, or until chicken is cooked through.
  4. Just before serving, mix up a combination of 1/4 cup BBQ sauce and 1/4 cup of raspberry preserves for dipping the baked chicken.
  5. Heat the garlic bread, as directed.
  6. Prepare the salad.
  7. Serve Raspberry Balsamic Chicken with a side of garlic bread and salad.

Freezeasy Meal Prep Directions

  1. In a small mixing bowl, whisk together 6 Tbsp olive oil, 6 Tbsp balsamic vinegar, and 1 cup raspberry preserves.

To each disposable tray, add the following ingredients:

  • 4 small boneless chicken breasts
  • Half of the prepared raspberry marinate/sauce

Cover with foil or lid, add label and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a bowl of warm water for about 20 minutes, before transferring to the oven and baking as directed.

Special notes

Mix up a combination of 1/4 cup BBQ sauce and 1/4 cup of raspberry preserves for dipping the baked chicken.
