A little bit of street corn flavor atop a light and lovely white fish - cod. A quick 5-ingredient meal that can be made on any weeknight, or enjoyed on the weekend!

Cooking Directions for Single Meal
- Set out the cream cheese to soften.
- Preheat the oven to 400 F. Lightly grease a small baking dish with non-stick cooking spray.
- Cut cod fillet into 4 pieces. Place the prepared baking dish and season with salt and pepper.
- In a small mixing bowl, mix together the drained corn, cream cheese, lime juice, and chili powder. Add directly onto the cod fillets in the baking dish.
- Bake in the preheated oven for 15 to 20 minutes, or until the cod is cooked through and no longer translucent in the middle.
- Prepare the salad.
- Warm the dinner rolls.
- Serve Roasted Cod with Corn with salad and dinner rolls.

- Cut 2 lbs. of cod fillet into 4 pieces.
- Set of 4 oz. cream cheese to soften.
- Open and drain 2 cans of corn
- In a small mixing bowl, mix together the 2 cans of corn, 4 oz. cream cheese, 4 Tbsp lime juice, and 2 Tbsp chili powder.
To each gallon-size plastic freezer baggie, add the following ingredients:
- 4 cod pieces
- Salt and pepper
- Half of the corn mixture
Remove as much air as possible and seal. Add a label to the baggie and freeze.
Freeze & Thaw Instructions
Put baggie in the freezer and freeze for up to 6 months in the fridge freezer or 12 months in a deep freezer. Thaw completely in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring the salmon and toppings to a baking dish. Bake at 400 F for 15 to 20 minutes.
