Cooking Directions for Single Meal

  1. Cook rice, as directed.
  2. Preheat the oven to 400 F.
  3. In a small mixing bowl, whisk together the lemon juice, olive oil and minced garlic.
  4. Cut salmon filet into 4 pieces. Place in a small baking dish and season with salt and pepper. Pour the lemon juice sauce over the top, then place the rosemary sprigs on top of each filet.
  5. Bake in the preheated oven for 15 to 20 minutes, or until the salmon is no longer pink in the middle.
  6. Prepare the salad.
  7. Serve Rosemary Salmon with side salad and rice.

Freezeasy Meal Prep Directions

  1. Cut 2 lbs. of salmon filet into 8 pieces.
  2. In a small mixing bowl, whisk together the 6 Tbsp lemon juice, 4 Tbsp olive oil and 2 tsp minced garlic.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 salmon pieces
  • Salt and pepper
  • 4 sprigs fresh rosemary
  • 2 sprigs fresh rosemary
  • 6 sprigs fresh rosemary
  • 8 sprigs fresh rosemary

Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw completely in the fridge overnight, before transferring the salmon and toppings to the baking dish. Bake at 400 F for 15 to 20 minutes.
