Ingredients for Single Meal

  • 1 1/2 - lb(s) peeled deveined shrimp
  • 1 - Tbsp rice vinegar
  • 3 - Tbsp soy sauce
  • 2 - Tbsp sesame oil
  • 1 - Tbsp honey
  • 1 - tsp ground ginger
  • 2 - Tbsp canola oil**
  • 1 - red bell pepper(s)
  • 1 - lb(s) julienned carrots
  • 1 - Tbsp cornstarch**
  • Garnish: - sliced green onions**
  • Side: - rice**
  • Side: - frozen egg rolls**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Cook rice and egg rolls, as directed.
  2. In a small mixing bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey and ginger. Add the shrimp to the marinade and let marinate in the fridge for at least 30 minutes.*
  3. Seed and slice the red bell pepper. Slice the green onions, diagonally to make ¾-inch long pieces.
  4. Heat the canola oil over high heat in large skillet or wok. Add the shrimp and marinade and saute over high heat for 1 minute. Add the sliced red bell peppers and julienned carrots and saute for another 5 minutes, or until all shrimp are no longer pink and fully cooked through. In a small bowl, stir the 1 Tbsp cornstarch with 2 Tbsp warm water, then swirl into the sauce in the skillet. Reduce heat to low and simmer for 5 minutes, while sauce thickens around the shrimp and veggies. Add sliced green onions as garnish.
  5. Serve Shrimp Stir-fry over rice with side of egg rolls.

Freezeasy Meal Prep Directions

  1. Seed and slice 2 red bell peppers.
  2. In a small mixing bowl, whisk together 2 Tbsp rice vinegar, 6 Tbsp soy sauce, 4 Tbsp sesame oil, 2 Tbsp honey and 2 tsp ginger.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 1 1/2 lb. deveined peeled shrimp
  • Half of the prepared marinade
  • Half of the sliced red bell peppers
  • 1 lb. julienned carrots
  • Do not add oil or cornstarch at the time of freezing.

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to skillet for cooking in the canola oil. Stir in cornstarch and water, as directed in the recipe.

Recipe is gluten-free when you use gluten-free soy sauce. If needed, use alternative side dish for the frozen eggrolls.

Thaw and saute in canola oil in wok or skillet over high heat, until shrimp is cooked through and veggies are softened. Stir in 1 Tbsp cornstarch with 2 Tbsp water at the end of cooking, to thicken the sauce.
Serve over rice with egg rolls.
