Slow Cooker Bacon-Maple Chicken

This wrapped chicken is packed with flavor from the bacon and homemade sauce. If your slow cooker “runs hot” and tends to dry things out, we suggest cooking for 5 to 6 hours, or add 1 cup of water or chicken stock before adding the chicken and sauce to the slow cooker. Ingredients for Single Meal

  • 4 - small boneless chicken breasts
  • 4 - slices bacon
  • - Salt and pepper
  • 1/4 - cup(s) maple syrup
  • 2 - Tbsp Dijon mustard
  • 2 - Tbsp vinegar
  • 1 - tsp minced onion
  • 1 - tsp minced garlic
  • Side: - dinner rolls**
  • Side: - salad**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Wrap each chicken breast with a slice of bacon and place into the slow cooker insert.
  2. In a small mixing bowl, whisk together the maple syrup, Dijon mustard, vinegar, minced onion and minced garlic. Pour over the top of the wrapped chicken breasts. Set on low and cook for 8 hours.
  3. Warm the dinner rolls.
  4. Prepare the salad.
  5. Serve Slow Cooker Bacon-Maple Chicken with dinner rolls and salad.

Freezeasy Meal Prep Directions

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 4 boneless chicken breasts, wrapped in a slice of bacon
  • 1/4 cup maple syrup
  • 2 Tbsp Dijon mustard
  • 2 Tbsp white vinegar
  • 1 tsp minced onion
  • 1 tsp minced garlic

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and slow cooking as directed.
