Ingredients for Single Meal

  • 3 - lb(s) beef chuck roast
  • - Salt and pepper
  • 1 - cup(s) beef stock
  • 1 - 15 oz. can(s) crushed tomatoes
  • 2 - Tbsp chipotle chili powder
  • 1 - Tbsp minced onion
  • 1 - tsp garlic powder
  • 1 - tsp ground cumin
  • 2 - tsp apple cider vinegar
  • 1 - bay leaf**
  • 12 - corn tortillas**
  • Garnish: - cilantro**
  • Side: - rice**
  • Side: - refried beans**

Cooking Directions for Single Meal

  1. Place the beef roast into the base of the slow cooker and season with a little salt and pepper.
  2. In a large mixing bowl, whisk together the beef stock, crushed tomatoes, chipotle chili powder, minced onion, garlic powder, ground cumin, and apple cider vinegar. Pour the sauce over the beef roast in the slow cooker. Add the bay leaf.
  3. Set the slow cooker on low and cook for 8 hours. Remove the bay leaf. Shred and combine the shredded beef into the sauce.
  4. Prepare and warm the rice and beans.
  5. Spoon and strain, then serve into the corn tortillas with preferred garnishes.

Freezeasy Meal Prep Directions

  1. In a large mixing bowl, whisk together 2 cups beef stock, 2 cans crushed tomatoes, 4 Tbsp chipotle chili powder, 2 Tbsp minced onion, 2 tsp garlic powder, 2 tsp ground cumin, and 4 tsp apple cider vinegar.
  2. Open 2 cans of crushed tomatoes.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 3 lb. beef chuck roast
  • Half of the prepared birria sauce

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker, adding the bay leaf. and cooking on low for 8 hours and serving as directed. Remove the bay leaf.

Special notes

If you can’t find chipotle chili powder at your store, look for a “dark chili powder” for an added depth of chili flavor.
