  • 1 - lb(s) ground beef
  • 1 - Tbsp minced onion
  • 1 - tsp garlic powder
  • 2 - 15 oz. can(s) black beans
  • 1 - 15 oz. can(s) Cannellini beans
  • 2 - 15 oz. can(s) tomato sauce
  • 2 - Tbsp chili powder
  • - Salt and pepper
  • Garnish: - shredded cheddar cheese**
  • Garnish: - sour cream**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Brown the ground beef in a large skillet with the minced onion and garlic powder. Drain, if needed, and add to the base of the slow cooker.
  2. Stir in the black beans, canellinni beans, tomato sauce, chili powder, salt and pepper. Set on low and cook for 8 hours. (You could also cook on low for 4 hours if you will not be away all day.)
  3. (Note: if your slow cooker “runs hot” and has dried out meat in the past, you might want to add 1/2 to 1 cup of water or beef stock to thin out the sauce and keep it from overheating or burning on the edges.)
  4. Serve Slow Cooker Black & White Bean Chili with garnishes and veggies.

Freezeasy Meal Prep Directions

  1. Brown 2 lbs. of ground beef with the 2 Tbsp minced onion and 2 tsp garlic powder.
  2. Open, drain and rinse 4 cans of black beans, and 2 cans of cannellini beans.
  3. Open 4 cans of tomato sauce.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Browned and cooled ground beef, half into each bag
  • 2 – 15 oz. cans black beans, drained and rinsed
  • 2 – 15 oz. cans tomato sauce
  • 1 – 15 oz. cans cannellini beans, drained and rinsed
  • 2 Tbsp chili powder
  • Salt and pepper to taste

Remove as much air as possible and seal. Add label and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.

Special notes

This could be made in a large saucepan or Dutch oven. Brown the ground beef as directed. Add all the other ingredients, as directed. Then simmer over medium low heat for 20 to 30 minutes to allow flavors to mingle. Serve as directed.

Dairy-Free Modifications

Omit the cheese and sour cream garnishes. Chili is dairy-free.
