Slow Cooker Cajun Sausage and Potatoes

Ingredients for Single Meal

  • 6 - small andouille sausage
  • 1 - green bell pepper(s)
  • 1 - red bell pepper(s)
  • 1/2 - cup(s) chicken stock
  • 3 - lb(s) gold potatoe(s)
  • 2 - Tbsp Cajun seasoning
  • 1 - tsp garlic powder
  • - Salt and pepper
  • Garnish: - sliced green onions**
  • Side: - veggies**
  • 1 - gallon-size freezer baggie(s)

Cooking Directions for Single Meal

  1. Slice the andouille sausage links.
  2. Seed and chop the red and green bell peppers.
  3. Add the chicken stock into the base of the slow cooker. Add the gold potatoes into the chicken stock, then sprinkle the sausage slices and chopped red and green bell peppers over the top. Sprinkle the Cajun seasoning and garlic powder over the top.
  4. Set on low and cook for 8 hours. Strain potatoes, bell peppers and sausages and spoon onto serving plates. Season with salt and pepper to taste.
  5. Prepare veggies.
  6. Serve Slow Cooker Cajun Sausage and Potatoes with sliced green onion garnish and side of veggies.

Freezeasy Meal Prep Directions

  1. Slice 12 andouille sausage links.
  2. Seed and chop 2 red and 2 green bell peppers.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • Half of the sliced andouille sausage
  • Half of the chopped red and green bell peppers
  • 3 lbs. gold potatoes (uncut)
  • 2 Tbsp Cajun seasoning
  • 1 tsp garlic powder
  • Do NOT add the chicken stock to the freezer baggie.

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker, adding the chicken stock, and cooking on low for 8 hours. Strain before serving.
