  • 3 - large boneless chicken breasts
  • 1 - cup(s) BBQ sauce
  • 1 - 20 oz. can(s) pineapple chunks
  • 1 - red bell pepper(s)
  • 1 - orange bell pepper(s)
  • Side: - dinner rolls or rice**

Cooking Directions for Single Meal

  1. Place the chicken breasts into the base of the slow cooker with ½ cup of water. (I like to add water to the slow cooker when using BBQ sauce to keep the sauce from burning on the edges of the slow cooker insert.)
  2. Pour the BBQ sauce over the chicken breasts in the slow cooker. Top with the pineapple chunks and bell pepper pieces. Sprinkle in a little salt and pepper.
  3. Set the slow cooker on high and cook for 4 hours.
  4. Serve Slow Cooker Caribbean Chicken with side of dinner rolls or rice.

Freezeasy Meal Prep Directions

  1. Slice 2 red bell peppers and 2 orange bell peppers.
  2. Open and drain 2 cans pineapple chunks.

To each gallon-size plastic freezer baggie, add the following ingredients:

  • 3 large boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 20 oz. can pineapple chunks, drained
  • Half of the diced red bell pepper
  • Half of the diced orange bell pepper

Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm
bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on high for 4 hours.

Special notes

This meal can also be cooked in a large saucepan or Dutch oven. Place all thawed ingredients to Dutch Oven and cook over medium heat with lid on for 30 minutes, or until chicken is cooked.

If slow cooking this for lunch, please thaw completely before cooking on high for 3 to 4 hours. If the meal is still partially frozen, I recommend slow cooking for at least 6 to 8 hours.
